Xiang Gu Shao Ji

Braised Chicken with Dried Shitake Mushrooms
Every Grain of Rice by Fuchsia Dunlop, pg 121
  • 1/2 cup dried shiitake mushrooms, soaked
  • 1/2 lb chicken, sliced
  • 2 spring onions
  • 2 tbs oil
  • 1/2 oz ginger, peeled & sliced
  • 2 tbs Shaoxing wine
  • 3/4 cup chicken stock
  • 1 tbs sugar
  • 2 tsp dark soy sauce
  • 1 tsp sesame oil
Szechuan 

  1. Stir fry chicken in hot oil until lightly browned 
  2. Add ginger and crushed onion whites
  3. Stir in wine, mushrooms, mushroom soaking water, and stock
  4. Add sugar, soy sauce and season
  5. Simmer covered for 30 minutes, stirring occasionally
  6. Increase heat and uncover to thicken sauce
  7. Add onion greens, sliced into 2 in pieces, sesame oil, any additional seasoning

Chicken Gnocchi Soup

  • 4 tbs butter
  • 1 tbs olive oil
  • 1 onion, diced
  • 3 tbs garlic, minced
  • 1/4 cup flour
  • ​1 pint half and half
  • 14 oz chicken stock
  • ​1 cup chicken, diced
  • 1 cup carrots, julienned 
  • 1 cup spinach, chopped
  • ​2 tsp thyme 
  • 1 tsp parsley
  • 1 tsp paprika 
  • 1/2 tsp nutmeg
  • salt & pepper
  • 16 oz gnocchi 

  1. Heat butter and olive oil until melted
  2. Cook onion and garlic until translucent 
  3. Whisk in flour and cook for a minute before whisking in half and half
  4. Simmer until thickened
  5. Whisk in stock, and stir until thickened
  6. Add seasoning, vegetables, chicken, and gnocchi
  7. Simmer on low for at least 30 minutes
  8. Season to taste
  9. Serve with pepper and parmesan cheese

Braised Lamb

Also delicious to just roast the carrots for a few hours!
  • lamb shanks
  • red and green chilies, sliced
  • garlic, crushed and chopped
  • 2 tsp smoked paprika
  • dash oregano
  • cumin seeds
  • salt & pepper
  • cinnamon stick, broken and lightly crushed
  • carrots, sliced at an angle
  • onions, thickly sliced
  • bay leaves
  • red wine
  • stock
  • mint
  1. Combine ingredients through olive oil, rub together, and marinate 30 min to overnight 
  2. In dutch oven on stove, cook brown until deep color change on all sides
  3. Mix in rest of marinade with lamb
  4. Add vegetables and bay leaves to pot and lift lamb to sit on top
  5. Deglaze pan with wine and bring to boil until reduced by half
  6. After adding stock, return to boil then cook in oven uncovered for 3 hours at 315 degrees
  7. Roll lamb in sauce, plate, then spoon remaining sauce on top
  8. Top with picked fresh mint and serve with vegetables

Arancini di Riso

Sicilian Rice Balls
  • ​​3 eggs
  • ​2 oz mozzarella balls/cubes
  • Marinara sauce
  • ​all-purpose flour
  • breadcrumbs
  • basil leaves and lemon, for garnish

  1. Cook risotto until al dente with an extra 2 oz of white wine
  2. Cool, mix in one egg, then refrigerate for at least a few hours
  3. Form rice ball or cone around mozzarella and/or a little sauce
  4. Roll in flour, then beaten eggs, then bread crumbs
  5. Fry in wok or pot for several minutes, turning to brown evenly
  6. Cool slightly on paper towels and serve with basil and marinara 

Creamy Lemon Pasta

  • ​3/4 tsp salt
  • 1/4 cup olive oil
  • 1 tbs lemon zest
  • 1 tsp honey
  • 3 shallots, minced
  • 1 cup heavy cream
  • 1 lb fettuccine
  • 2 tbs lemon juice
  • 3 oz (3/4 cup) Parmesan cheese
  • 1/2 tsp black pepper
  • 1/3 cup lemon supremes

  1. Heat oil and zest in a large skillet over medium.
  2. Add salt, honey, and shallots, and cook until softened and oil is hot, about 5 minutes
  3. Whisk in cream and simmer 2 minutes
  4. Stir 1/2 cup pasta water and cheese into sauce
  5. Add lemon juice to noodles and toss until absorbed
  6. Toss pasta with sauce
  7. Garnish with pepper, parsley, lemons, and more cheese

Lamb Maqli

A dish from the Naples cookbook - a twist on a Middle Eastern Dish
  • 1/2 lb lamb meat cut into 1 in square pieces
  • 2/3 cup mushrooms, quartered
  • 1/4 cup pine nuts
  • 2 oz olive oil
  • 1 tbs garlic, minced
  • 1/4 onion, minced
  • 2 tbs parsley, chopped
  • 1 tbs cumin
  • 2 oz dry white wine
  • 1 oz lemon juice
  • 3 oz veal stock
  • 1/2 stick butter, softened

  1. Toss lamb in hot oil to sear all sides; set aside
  2. Toss mushrooms, garlic, and onion in pan before adding pine nuts and browning
  3. Deglaze with wine, add stock, lemon juice, and cumin
  4. Season, stir in butter butter, and half of parsley
  5. Spoon lamb over fettuccini pasta and garnish with remaining parsley

Baked Sweet Potato

  • sweet potato
  • olive oil
  • salt 
  • pepper

  1. Stab potatoes with fork, coat with oil and seasoning and wrap in foil
  2. Bake for several hours at 300 degrees 

Parmesan Zucchini

  • zucchini, sliced thinly
  • olive oil
  • garlic powder
  • Italian seasoning
  • parsley 
  • ginger
  • rosemary 
  • parmesan cheese

  1. Coat zucchini with oil and seasoning and lay out on baking tray
  2. Top with parmesan
  3. Bake at 400 for 5-10 minutes then put on broil long enough to brown the cheese

Miso Noodles

Modified from a Gordon Ramsay recipe from his Ultimate Cookery Course on Amazon, episode 4.
  • 2 cups water
  • 2 cups chicken stock
  • 3 tbs miso paste
  • 1 tbs fresh ginger, grated or minced
  • shiitake mushrooms, soaked and sliced
  • portabellas, sliced thinly
  • ​bok choy, stems and leaves separated
  • soy sauce
  • 1 egg per serving
  • schecuan pepper
  • egg noodles, soft
  • spring onions, sliced

  1. Cook noodles only half the time from the directions
  2. Mix miso paste into boiling water and stock
  3. Add, mushrooms, bok choy stems, and soy sauce
  4. ​Poach eggs 2-3 minutes
  5. Add bok choy leaves and season
  6. Spoon broth on top of noodles in bowl and top with egg and spring onions​

Brown Butter & Sage

  • 1 stick butter
  • 2 tbs garlic, minced
  • 1 tbs sage

  1. Cook butter and garlic until begins browning, stirring occasionally 
  2. Stir in sage, season, and stir over pasta
