Roasted Figs

  • Figs, halved
  • Goat Cheese
  • Balsamic/Raspberry Vinegar 
  • Figs, sliced open
  • Gorgonzola or Blue Cheese
  • Prosciutto
  • Honey

Jasmine Caramels

  • 1 cup half & half
  • 2 tbs Jasmine tea 
  • 1/2 stick butter, cut into cubes
  • 1 cup brown sugar
  • ​1/2 cup light corn syrup
  • 1 tsp vanilla extract
  • dash of salt

  1. Heat the half & half until near boiling, then steep tea 2-3 minutes
  2. Combine the butter and brown sugar on stove and melt while whisking
  3. Once melted, add the corn syrup, salt, and jasmine-infused half & half
  4. Whisk to combine, then bring to a simmer (and stop whisking) and cook until 244
  5. Remove from heat, stir in the vanilla, and pour into buttered parchment paper on buttered pan
  6. Once cooled, cut into small squares and wrap in wax paper.

Baked Apples

  • apple
  • 1-3 tsp honey per apple
  • 1/2 cup rolled oats
  • 1/2 cup brown sugar
  • ​1 tsp cinnamon
  • 1/2 tsp ginger
  • 1/2 stick butter, melted

  1. if apples don't stand up slice off bottom
  2. cut 1 in  opening on other side and scoop out middle
  3. fill new hole with honey
  4. combine all other ingredients and fill apples
  5. bake at 350 for 40-55 minutes, until topping is golden and apples are soft

Baked Brie

  • 1-2 triangles of brie 
  • 1 can Pillsbury crescent rolls
  • berries (raspberries, pomegranate seeds, etc)

  1. Wrap dough around cheese, either around the large pieces or cut into smaller ones
  2. Place berries either inside or on top of dough
  3. Bake at 400 on bread is done

Glazed Peaches

  • 2 ripe peaches, halved and pitted
  • ​1/4 cup balsamic vinegar
  • 1 tbs brown sugar
  • 1/2 tbs lemon juice
  • dash rum

  1. Reduce ingredients at low boil
  2. Grill peaches for at least 2 minutes on each side
  3. Top with balsamic reduction
  4. Serve warm

No Bake Cookies

  • 2  cups sugar
  • 1/2 cup milk
  • 1 stick unsalted butter
  • 1/4 cup cocoa powder
  • ​3 cups rolled oats
  • 1 cup smooth peanut butter
  • 1 tablespoon pure vanilla extract
  • pinch kosher salt

  1. Bring the sugar, milk, butter, and cocoa to a boil over medium heat, stirring occasionally
  2. Let boil for 1 minute
  3. Remove from the heat and add oats, peanut butter, vanilla and salt
  4. Stir until combined
  5. Spoon onto parchment paper and leave until cooled and hardened, about 30 minutes

Triple Chocolate Molten Mug Cake

For Alice's birthday we had a zoom party where everyone made their own mug cake.  I, of course, read a bunch of recipes before making one up.  It ended up being way more delicious than anything cooking in the microwave had any right to be.
  • 1/4 cup flour
  • 1/4 cup brown sugar
  • 2 tbs cocoa powder
  • pinch salt
  • 3 tbs melted butter
  • 3 tbs buttermilk
  • 1 egg
  • ​1 tbs espresso rum
  • 1 oz chocolate chips
  • 4 chocolate truffles
  • 2 tbs dulce de leche
  • water
  • 4 tbs German chocolate stout
  • 1/2 cup powdered sugar

Adventures with Boys

Today my boys decided they wanted egg sandwiches (with tortillas since we were out of bread) and Velveeta macaroni and cheese).  Then decided the two should really be combined.  With Taco Bell hot sauce.  Don't ask about the pickles.
