Shrimp & Grits

  • 2 cups water
  • 1 cup grits, stone-ground
  • 1 cup chicken broth
  • 1 cup heavy cream
  • bacon
  • 1 lb shrimp
  • 1/2 lb andouille sausage 
  • 1/4 tsp cayenne pepper
  • 1 tsp thyme
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/4 tsp onion powder
  • ​1/4 tsp oregano
  • 1/8 tsp white pepper
  • salt & pepper, to taste
  • 1 bell pepper, chopped
  • 1 onion, chopped
  • 5 cloves garlic, chopped
  • 1 can fire roasted tomatoes 
  • 1 cup chicken stock
  • 1/3 cup heavy cream
  • 1/2 stick butter
  • 2 tbs parsley, chopped 

  1. Bring water to boil and add grits
  2. Cook 30 minutes, stirring occasionally, gradually adding heavy cream and broth
  3. Cook down bacon 
  4. Cook shrimp and sausage in hot grease, remove
  5. Cook vegetables until soft
  6. Season and add garlic
  7. Stir in tomatoes, broth, and cook down
  8. Stir in cooked shrimp and sausage, cream, butter, and parsley
  9. Once butter is melted, serve over grits
