​​​note:  When modifying a recipe for honey, For every cup of honey you add to replace a cup of sugar, reduce the liquid in your recipe by 1/4 cup, add 1/2 tsp baking soda (to neutralize the acid in honey) and reduce the baking temperature by 25ºF.

Baked Apples

  • apple
  • 1-3 tsp honey per apple
  • 1/2 cup rolled oats
  • 1/2 cup brown sugar
  • ​1 tsp cinnamon
  • 1/2 tsp ginger
  • 1/2 stick butter, melted

  1. if apples don't stand up slice off bottom
  2. cut 1 in  opening on other side and scoop out middle
  3. fill new hole with honey
  4. combine all other ingredients and fill apples
  5. bake at 350 for 40-55 minutes, until topping is golden and apples are soft

Apple Cranberry Crumb

  • apples, peeled, cored and sliced
  • 10 oz cranberries
  • ​​2 tbs lemon juice
  • orange zest
  • 1 tbs vanilla extract
  • 1/4 cup flour
  • 1  cup brown sugar
  • 3/4 cup granulated sugar
  • 3/4 cup granulated sugar
  • 1 tsp cinnamon
  • 1/8 tsp allspice
  • 1/4 tsp cloves​
  • 1/4 tsp nutmeg
  • 1/4 tsp salt​

  1. Combine apples, cranberries, lemon juice, orange zest, and vanilla
  2. Toss with mixture of dry ingredients
  • ¼  cup water
​preheat oven to 375 degrees F. On a floured surface, roll one pastry portion to a circle 14 inches in diameter. Transfer pastry to a 9-inch deep dish pie plate. Trim pastry even with rim of pie plate; cover and set aside. On a floured surface roll remaining pastry to a 12-inch circle; cover and set aside.
In a large bowl combine apples, cranberries and lemon juice. In a small bowl combine sugar, flour, cinnamon, allspice and salt.
Spread bottom of crust with Pastry Cream. Toss apple mixture with dry ingredients; add to pie tin. Immediately add top crust. Trim to 1/2-inch beyond edge of pie plate. Fold top pastry under bottom pastry. Crimp edge as desired. Cut 4 small openings, so the steam is released. Combine egg and whipping cream; brush liberally on pie. Place pie on a baking sheet.
Bake for 1 hour and 20 minutes. Cover edges of pie with foil, if necessary, to prevent overbrowning. Cool on wire rack.

Hand Pies

  • Sheet Pastry Dough
  • 1 cup peaches, peeled and diced
  • 2 tbs brown sugar
  • 2 tsp thickening
  • 1 egg
  • 1 tbs water

  1. Combine peaches, sugar, and thickening (I used potato starch in bowl)
  2. Cut dough into rectangles about 2 x 3 in
  3. Prepare egg wash with egg and water and brush rectangles on one side
  4. Spoon about a tbs of peaches (leave liquid behind) onto half of the squares
  5. Place other squares (egg wash side down) over peach squares and press edges together
  6. Use fork to crimp the edges and poke holes in the tops
  7. Chill until oven preheats to 375
  8. Brush chilled pies with egg wash
  9. Bake for 35 minutes, until golden brown

Peach Galette

Filling:
  • 3 cups peaches, 1/2 inc slices
  • 1 tbs thickening
  • ​1 tbs lemon/orange zest and juice
  • ​1/4 tsp ginger
  • 1/2 tsp vanilla
  • 1/3 cup brown sugar
Egg Wash:
  • 1 egg
  • 1 egg yolk
  • 1 tbs heavy cream

  • 1 tbs silver rum
  • course sugar (optional)

  1. Toss sliced peaches (with or without peels) in all filling ingredients except sugar
  2. Organize peach slices in spiral on puff pastry
  3. Cover in sugar
  4. Cut slits around dough every 5 inches and fold up onto outer ring of fruit
  5. Refrigerate while preparing wash
  6. Wish together egg wash ingredients and coat dough, including between flaps
  7. Bake for at least 20 minutes at 400 F until sugar is cooked down
  8. Brush filling with rum and decorate dough with course sugar (I used raspberry sugar)
  9. Bake 40 more minutes until filling is bubbling and crust is brown
  10. Cool for 5 minutes and serve warm

Peach Cobbler

  • 6 peaches, peeled and sliced
  • 2 tbs brown sugar
  • 1 tbs thickener (I used potato flour)
  • 1/4 orange, zested
  • 1 tbs lemon juice
  • 1/2 tsp vanilla or rum
  • spices to taste (cinnamon, nutmeg, etc)
  • 1/2 cup flour
  • 1/2 cup oats
  • 1/2 stick unsalted butter, cut
  • 1/4 cup brown sugar
  • 1/2 tsp vanilla
  • dashes cinnamon
  • additional spices to taste

  1. Combine all ingredients on left into a baking dish
  2. In a bowl, mix all dry ingredients from right
  3. Cut in butter and vanilla and squeeze together
  4. Top fruit mixture
  5. Bake 375 for 45 minutes, or until bubbly 

Fruit Crumble

  • 5 apples worth of fruit, very ripe
  • 2 tbs sugar
  • pinch of cinnamon
  • tsp vanilla or vanilla seeds
  • dried cranberries/strawberries
  • lemon
  • ​lemon
  • 1 cup flour
  • 2 tbs brown sugar
  • stick butter, room temperature
  • 1/2 tbs cinnamon
  • 1 cup granola

  1. Mix sugar, cinnamon, and vanilla into dish to caramelize
  2. Swirl dish until brown
  3. Grate in two apples , including skin; they'll break down as they cook
  4. Stir in sliced fruit, lemon zest, lemon juice, and cranberries
  5. Turn off heat and leave to sit
  6. Mix crumble by combining flour, brown sugar, butter, and cinnamon with hands
  7. Combine with granola
  8. Starting in the middle, place crumble into dish and turn heat back on
  9. As soon as fruit begins to mixture, move to oven
  10. Back at 400 for 12 - 14 minutes until golden brown

Blueberry Crumble Bars

​Mom gave me part of the 11 pounds of blueberries she bought, and while I don't like to eat them I DO like to eat baked goods with them.
  • 3 cups flour
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 large egg
  • ​1 1/2 tsp vanilla extract
  • 1 cup unsalted butter, chilled and cubed
  • 1 tbsp cornstarch
  • 1/2 cup granulated sugar
  • 1 1/2 tbsp lemon juice
  • 4 cups blueberries, room temperature

  1. Preheat oven to 375 and prepare a 9x13-inch baking dish
  2. In a large mixing bowl whisk together flour, 1/2 cup granulated sugar, brown sugar, baking powder and salt. 
  3. In a large bowl, whisk together egg and vanilla. 
  4. Mix in flour, 1/2 cup sugar, brown sugar, baking powder and salt
  5. Add cold butter cubes - cut together with fork/knife/pastry cutter until crumbly 
  6. Press 1/2 of the mixture evenly into prepared baking dish.
  7. In a separate mixing bowl, whisk together remaining 1/2 cup sugar and cornstarch
  8. Stir in lemon juice and blueberries
  9. Spread berries evenly over crust.
  10. Sprinkle remaining crumb mixture over berries. 
  11. Bake about 38 - 42 minutes until golden brown.

Make more lemony by adding lemon zest.
