​​​note:  When modifying a recipe for honey, For every cup of honey you add to replace a cup of sugar, reduce the liquid in your recipe by 1/4 cup, add 1/2 tsp baking soda (to neutralize the acid in honey) and reduce the baking temperature by 25ºF.

12 Bones Smokehouse, an updated edition; pg 196
  • 2 cups flour
  • 1 tbs baking powder
  • 1/4 tsp baking soda
  • 1/2 tsp kosher salt
  • 2 tbs sugar
  • 1 cup smoke Gouda cheese, grated
  •  tbs fresh oregano, chopped
  • 1 tsp black pepper
  • 2 tsp smoked paprika
  • 1 tsp garlic powder
  • 2 tbs butter, cut into pieces
  • 1 cup buttermilk, cold

  1. Whisk together flour, baking powder, baking soda, salt ,sugar, cheese, oregano, and pepper 
  2. Stir in butter
  3. On a dry surface, mound dough together and smear down with your hand
  4. Continue until all butter pieces integrated
  5. Return dough to bowl, make well in center, and pour in buttermilk 
  6. Fold dough into buttermilk until combined
  7. Drop 2 tbs balls onto lined cookie sheet or muffin pan
  8. Bake for 15 minutes at 400, until edges begin to crisp

Pumpkin Espresso Brownies

If you REALLY love pumpkin taste, add the remainder of the can from the pumpkin mix to the brownie batter
Brownie Mix:
  • 1/2 cup chocolate, chips or chopped
  • 1/3 cup espresso powder
  • 1 1/4 sticks butter, cut into pieces
  • 2 eggs
  • 1 cup brown sugar
  • 1 tsp vanilla
  • 2 tbs bourbon
  • 2 tbs cocoa powder
  • 1/4 tsp salt
  • 1 1/2 cups flour
  • 4 oz  - 2 cups chocolate chips/chunks
Pumpkin Mix:
  • 4 oz cream cheese, softened
  • 1/3 cup sugar
  • 1 egg
  • 1 cup canned pumpkin
  • 1 tsp vanilla
  • ​1/2 tsp cinnamon
  • 1/2 tsp ginger
  • 1/4 tsp nutmeg
  • pinch allspice
  • pinch cloves

  1. Melt together chocolate, espresso and butter in double boiler, stirring occasionally
  2. Beat together eggs, sugar, vanilla, bourbon, cocoa powder, salt at low speed until light and fluffy
  3. Fold in melted chocolate
  4. Fold in flour until just combined
  5. Stir in additional chocolate chips

  6. Cream cream cheese on high speed until smooth
  7. Beat in sugar, then egg
  8. Beat in pumpkin, vanilla, and spices

  9. Pour half of brownie batter into the prepared pan
  10. Spread pumpkin cheesecake batter over top
  11. Dollop remaining brownie batter in lines over the cheesecake mixture
  12. Swirl batters together by dragging a knife across the lines back and forth.

  13. Bake at 350 for 30 -45 minutes and cool before cutting

Baked Apples

  • apple
  • 1-3 tsp honey per apple
  • 1/2 cup rolled oats
  • 1/2 cup brown sugar
  • ​1 tsp cinnamon
  • 1/2 tsp ginger
  • 1/2 stick butter, melted

  1. if apples don't stand up slice off bottom
  2. cut 1 in  opening on other side and scoop out middle
  3. fill new hole with honey
  4. combine all other ingredients and fill apples
  5. bake at 350 for 40-55 minutes, until topping is golden and apples are soft

Molasses Cookies

  • 1 1/2 stick butter, softened
  • 1/2 cup white sugar
  • 1/2 cup brown sugar
  • 1/4 cup molasses
  • 1 egg
  • 2 1/4 cup flour
  • 2 tsp baking soda
  • 1/2 tbs ginger
  • 1 1/2 tsp cinnamon 
  • 1/2 tsp cloves
  • dash nutmeg
  • pinch salt

  1. Cream together butter and sugar on medium-high until light, fluffy, and pale yellow
  2. Beat in egg and molasses on medium-low
  3. Stir in dry ingredients slowly
  4. Refrigerate for at least an hour
  5. Form one inch balls and roll in large grain sugar
  6. Space out on cookie sheet prepared with parchment paper
  7. Bake 8-9 minutes at 350.   Don't stack cookie sheets too close or they won't crack
  8. 8 minutes isn't always enough but 10 minutes is usually too much

Quiche

  • salami
  • eggs
  • ​cream
  • grated cheese (Gruyere  or other)
  • ​parsley

  1. Bake pie crust according to directions 
  2. Whisk together eggs, cream, cheese, salt and pepper
  3. Mix in salami and parsley 
  4. Fill crust with egg mixture and grate more cheese on top
  5. Bake 15-20 minutes, until golden

Sourdough Bread

Alice left starter at my house and now I have another organism to keep alive.
  • Starter
  • Flour
  • Water

  1. Make dough with starter that was fed about 4 hours ago
  2. Combine 50 g starter with 350 g water
  3. Stir in 500 g flour
  4. Fold Dough 20-25 times, then repeat about every hour a few times, folding less each time
  5. The last time only fold around once
  6. Move to another bowl lined with a floured paper towel
  7. Refrigerate overnight to proof
  8. Dumb onto parchment paper, dust with flour, slice top, and place in covered dutch oven
  9. Bake at 450 degrees 
  10. Cool for 1 hour before cutting

Apple Cranberry Crumb

  • apples, peeled, cored and sliced
  • 10 oz cranberries
  • ​​2 tbs lemon juice
  • orange zest
  • 1 tbs vanilla extract
  • 1/4 cup flour
  • 1  cup brown sugar
  • 3/4 cup granulated sugar
  • 3/4 cup granulated sugar
  • 1 tsp cinnamon
  • 1/8 tsp allspice
  • 1/4 tsp cloves​
  • 1/4 tsp nutmeg
  • 1/4 tsp salt​

  1. Combine apples, cranberries, lemon juice, orange zest, and vanilla
  2. Toss with mixture of dry ingredients
  • ¼  cup water
​preheat oven to 375 degrees F. On a floured surface, roll one pastry portion to a circle 14 inches in diameter. Transfer pastry to a 9-inch deep dish pie plate. Trim pastry even with rim of pie plate; cover and set aside. On a floured surface roll remaining pastry to a 12-inch circle; cover and set aside.
In a large bowl combine apples, cranberries and lemon juice. In a small bowl combine sugar, flour, cinnamon, allspice and salt.
Spread bottom of crust with Pastry Cream. Toss apple mixture with dry ingredients; add to pie tin. Immediately add top crust. Trim to 1/2-inch beyond edge of pie plate. Fold top pastry under bottom pastry. Crimp edge as desired. Cut 4 small openings, so the steam is released. Combine egg and whipping cream; brush liberally on pie. Place pie on a baking sheet.
Bake for 1 hour and 20 minutes. Cover edges of pie with foil, if necessary, to prevent overbrowning. Cool on wire rack.

Sweet Potato Pie

  • 2 large sweet potatoes, baked and peeled
  • 1 pie sheet
  • 1/2 stick butter
  • 1/2 cup evaporated milk
  • ​1/2 tsp vanilla
  • 1 egg, beaten
  • nutmeg
  • cinnamon

  1. Whisk all ingredients together
  2. Pour into pie shell
  3. Bake at 350 for 1 hour
  4. Cool
  5. (optional) Before serving, cover in tiny marshmallows and toast in the oven

Pumpkin Bread

  • 1 can pumpkin
  • 3 1/2 cups flour
  • 3 cups sugar
  • 2 tsp baking soda
  • 1 tsp salt
  • 2 tsp cinnamon
  • 2 tsp nutmeg
  • 1/2 tsp allspice
  • ​dash cloves
  • 4 eggs
  • 1 cup vegetable oil
  • 2/3 cup water

  1. Preheat oven to 350 F
  2. Mix dry ingredients in a big bowl
  3. Mix wet ingredients in slowly
  4. Stir until blended
  5. If adding optional ingredients, add last
  6. Bake approximately 1 hour
