Pizza Night

We had pizza night to take advantage of Alice and her starter both living in our house for a month.
  1. Top with sauce and all toppings except for cheese and bake 5 min (or 10 for thick crust)
  2. Add cheeses and leaf toppings and bake for 5-7 more minutes until cheese is melted

Sauce

  • 2 tbs olive oil 
  • 2 tbs garlic, minced
  • 28 oz crushed tomatoes
  • 6 oz tomato paste
  • 1/2 tbs sugar
  • 1 tsp basil
  • 1/2 tsp oregano
  • salt & pepper

  1. Cook oil and garlic until fragrant
  2. Add other ingredients and simmer 15 - 30 min

Dough

  • 1 cup sourdough starter
  • 1/2 cup lukewarm water
  • ​2 1/2 cups flour
  • 1 tsp salt

  1. Mix all ingredients then knead for about 7 minutes in a mixer with the dough hook, until the dough wraps itself around the hook and cleans side of bowl
  2. Let dough double in greased container, 2-4 hours
  3. Shape/flatten dough on oiled pan and let rest for 15 minutes
  4. Gently press dough toward edges and rest again if it starts to shrink back

  • carmelized onions
  • roasted red peppers
  • roasted garlic
  • pineapple
  • portabella mushrooms
  • potato 
  • prosciutto
  • salami
  • bacon
  • chorizo 
  • burrata mozzarella
  • goat cheese
  • spinach
  • basil
