Pad Kee Mow / Drunken Noodle

  • 2 tbs soy sauce
  • 2 tbs fish sauce
  • 3 tbs dark/sweet soy sauce
  • 2 tbs oyster sauce
  • 2 tbs garlic, mashed
  • 1 tsp chili powder or 5 chilli peppers, mashed​
  • 1 onion, sliced
  • 2 bell peppers, sliced
  • 1 large carrot, julienned
  • Thai basil
  • 3 eggs
  • 1 lb protein
  • rice noodles - chantaboon rice sticks

  1. Soak rice noodles in hot water
  2. Combine sauces
  3. Simmer garlic and chilies in oil until soft and fragrent
  4. Saute vegetables
  5. Push to side to brown meat on all sides.
  6. Push to side, add more oil, and stir fry eggs
  7. Fold noodles into eggs and mix with vegetables and protein
  8. Mix in sauces and continue to stir fry dish
  9. Fold in basil
Vegetarian substitution: use tofu as protein
Vegan substitutions: Vegan fish sauce is gross, just use extra soy sauce. Sub oyster sauce with Hoisen, Mushroom, or Black Bean sauce.
