Cookie Dough Cupcakes

Cookie Dough
  • ​3/4 cup flour
  • 1/8 tsp baking soda
  • 1/8 tsp salt
  • 1/4 cup butter
  • 1/4 cup packed brown sugar
  • 2 tbsp milk
  • 1 tsp vanilla
  • 1/2 cup chocolate chips
Frosting
  • 1/3 cup butter
  • 1 cup powdered sugar
  • 1/4 cup brown sugar
  • 1/4 cup flour 
  • 1 tbsp milk
  • 1/2 tsp vanilla

  • 2 cups flour
  • 2 cups sugar
  • 3/4 cup cocoa powder
  • 2 tsp baking powder
  • 1 1/2 teaspoons baking soda
  • 1/2 tsp salt
  • ​1 tsp espresso powder
  • 1 cup buttermilk
  • 1/2 cup vegetable/canola oil
  • 2 large eggs
  • 2 tsp vanilla extract
  • 1 cup boiling water

  1. Filling: cream together butter and sugar, then whisk in the milk and vanilla
  2. Mix in the dry ingredients until smooth and creamy. Fold in the chocolate chips
  3. Scoop rounded tablespoons of cookie dough onto a cookie sheet and freeze for 30 min
  4. Preheat your oven to 375º and line a cupcake tin.
  5. Cake: Whisk together dry ingredients. Add in the wet and stir until combined
  6. Pour batter into cupcake cups  and press a ball of dough into each cupcake
  7. Bake about 20-25 min
  8. Frosting: Cream together the sugars and butter
  9. Add in the milk, vanilla and flour and stir until smooth and fluffy
  10. Frost cooled cupcakes and decorate with chocolate chips
